I made this salad off the cuff one day when I needed something quick to bring to a family dinner. It was quick because all the ingredients are simple pantry staples.
Feel free to change it up a bit, as I’ve also made it with only romaine lettuce and no spinach, and I left out the pecans for those with allergies, and it was still a hit! (not as beautiful looking, but it still got rave reviews!)
It’s sweet, tart and tangy. And these days one salad I keep eating over and over again!
Apple Cinnamon Garden Salad
Ingredients
- Salad
- 3 handfuls baby spinach
- 1 romaine heart chopped
- 2 celery ribs chopped
- 1/4 cup raisins
- 1/4 cup raw pecans
- 1 granny smith apple sliced into 1/4 inch thick slices
- juice of 1/2-1 lemon
- Dressing
- 3 Tbsp extra virgin olive oil
- 3 Tbsp apple cider vinegar
- 2 Tbsp maple syrup
- juice of half a lemon
- 1/2 tsp ground cinnamon
Instructions
- Slice apples and add them to a bowl with the juice of the lemon (this prevents the apple from browning if you are making the salad in advance)
- Let apples soak for 5 minutes, and drain lemon juice (you can use any remaining lemon juice for the dressing)
- Add spinach and romaine to a large bowl
- Top with chopped celery, raisins, and apples
- Place all dressing ingredient in a bowl and stir to combine.
- Dress salad with dressing just before serving.
