Best Ever Lactation Muffins

Move over store bought lactation cookies and other packaged snacks marketed as such, and make room for these wholesome homemade muffins you can sink your teeth into when you’re a ravenous breastfeeding mama.

You know what I’m talking about.

The 3am dream feed that leaves you SOOOO incredibly hungry that you’ll eat even just a whole bowl of plain tasteless rice cause that’s all there is in the fridge.

Yup been there done that.

And that’s why I created these muffins that will satisfy that breastfeeding-mama- hunger while also promoting lactation.

Yup, these muffins will promote breast milk production!

Did you know there are certain foods and herbs that can help produce and increase your breast milk supply. These foods and herbs are called galactogogues.

One such galactagogue food is oats and the main ingredient in these muffins. Oats impact the milk making hormones as well as support the immune system, while the fibre nourishes and restores the healthy bacteria in our gut.

In this recipe I soaked the oats in fenugreek tea not only because soaking grains allows your body to absorb all the nutrients better, but also because it’s also easier on your digestive system, and because I’m all about doing two things at once – you know, killing two birds with one stone!

The milk-producing herb in this recipe is fenugreek, which is found in the tea. Fenugreek not only aids in breast milk production but is also a source of protein, and vitamin C. Hooray for keeping your immune system strong while adjusting to the crazy days and sleepless nights of motherhood.

So make sure to bake a batch of these muffins, even if you’re not breastfeeding. And they’re healthy enough for your hubby and kids to eat too! But you might just want to keep them all to yourself. #justsayin’ #thehungerisreal

Ingredients:

1 1/4 cup old fashioned oats

1 cup boiled water

1 fenugreek tea bag

Wet Ingredients

1 egg

3/4 cup coconut or almond milk

1/4 cup coconut oil

3/4 cup raw cane sugar

1 tsp vanilla extract

Dry Ingredients 1 1/4 oat flour

4 tsp baking powder

1 tsp salt

3/4 cup semisweet chocolate chips

Method: Preheat oven to 400 degrees

Steep teabag in water and then soak oats in the tea for 1 hour or up to overnight.

Once oats have soaked, mix them together in a bowl with the egg, milk, coconut oil, vanilla extract.

Mix all dry ingredients (except for chocolate chips) together in another bowl.

Mix dry ingredients with wet ingredients, then fold in the chocolate chips. Bake at 400 degrees for 25-30 minutes.
