Happy Mothers Day this coming weekend Mamas!!
I hope you plan on sharing a beautiful day with your mother, grandmother, mother-in-law, daughter and other family members this weekend!
This weekend I’ll be celebrating my Oma’s 95th Birthday (Oma is Dutch for Grama), my hubby’s birthday, and mothers day – all in one weekend.
In fact between the last few weekends and the upcoming weekends I’m a cake baking machine:
- my mother in laws birthday
- my daughters 5th birthday
- my hubby’s birthday
- and then my daughter’s party with her friends
Here’s our healthy chocolate cake we turned into a dirt worm cake. (This cake is super healthy as it’s high in protein, high in fibre, made with only 1/2 cup sugar, it’s also gluten free!) We frosted half of it with my chocolate cream cheese frosting and the other half with my chocolate coconut cream frosting recipe (recipes below) You can get the chocolate coconut flour cake recipe from Desserts with Benefits.
I should just start a new business baking cakes (and salads) for people!
After all if you invite me to a party, BBQ, or any event with food, I’ll bring a salad or dessert 95% of the time. I’m just that type of gal. (I bring the two most important food groups!!)
I am Dutch you know, and to us, desserts are a food group in itself!
Now let’s get to the real important stuff shall we?
Let’s talk frosting.
Cake icing.

If you’re the type who makes a cake and buys it from a box: STOP it. Just STOP.
And if you’re the type who buys the frosting from the container: STOP it. Just STOP it.
I’m here to tell you that YOU CAN EAT CLEAN, and STILL HAVE YOUR CAKE AND EAT IT TOO!
Just because it’s called cake or frosting doesn’t mean its bad.
As you probably already know, I’m a recipe hoarder collector, And even though I went through my collection, and did a very extensive Google search, I’ve had a hard time finding one place where I could find a HEALTHY cream cheese frosting and adapt it and turn into chocolate icing.
So I did the next best thing and created my own.
Nor did I find a healthy chocolate coconut cream frosting, so I created my own recipe.
All 4 of my frosting recipes are made WITH REAL FOOD INGREDIENTS!

So let’s stop buying that stuff they call frosting in a container (it’s just made from sugar and paint by number colours and other yucky fillers anyways)
Here are the cake frosting recipes you’ve been waiting for!
Ingredients
- 1 250g brick cream cheese
- 4Tbsp real Canadian maple syrup
- 1/4 tsp vanilla extract
- To make it Chocolate Frosting
- add:
- 2 Tbsp heaping cacao powder
- 2+Tbsp coconut milk to thin
- 2 Cans of coconut milk refrigerated at least overnight or longer
- 3Tbsp real maple syrup
- 1/2 tsp vanilla extract
- To make it chocolate add:
- 4Tbsp heaping cacao powder
Instructions
- Place cream cheese, maple syrup and vanilla in a large bowl and beat together with a hand mixer.
- Stop a few times to scrap down the sides of the bowl.
- Taste to see if you want to add more maple syrup for a sweeter frosting.
- To make it chocolate frosting
- Do as stated above, and then add the cacao powder and mix by hand so it's just incorporated (this is so that you don't get cacao powder puffing up to your face.) finish by mixing well with the hand mixer.
- If it's too thick, start by adding 2Tbsp of coconut milk, mix some more and check the consistency
- open can carefully and remove only the top hardened cream into a bowl
- If your can doesn't have hardened cream, it won't work for this recipe.The best brand to use is Thai Kitchen
- Save the coconut water for another recipe or add to a smoothie
- Add the maple syrup and vanilla extract and blend with a hand blender until smooth
- Taste and add more maple syrup if you want it sweeter
- For Chocolate Coconut Cream Frosting
- Blend all as directed above. Then mix in the cacao powder by hand with a spatula just so there is no more powder remaining. Then mix with hand mixer until well incorporated.
