After I had my first child, I was a HUNGRY Mama! Most noticeably during the night I needed to eat! And that usually meant Lara bars! I would make a monthly trip down to my local Costco and buy a box or two! They were my go-to snack of choice, and are perfect for mom’s on the go who need something quick to eat especially when out with baby.
I don’t know what changed, but this time with baby #2, I decided to make my own homemade lara bars and create my own recipes. I’m not the hungry mama I was with my first child, but I do get hungry and need snacks. Makes me wonder why I didn’t just make my own lara bars. Arh… I could have saved money by making them myself! They are soooo easy. I like to make 3 different types at one time, because I really really hate cleaning my food processor. So if I’m taking it out from the deep and dark area of the cabinets, it had better be worth it!!
Here are 3 flavors I made today.
Apple Cinnamon
1 cup raw almonds
1 cup dried apple pieces chopped (do not add to the food processor. Mix it in at the very end)
½ cup dates
4 prunes
4 dried figs
Seedy Pecan
1 cup raw pecans
1 cup dates
16 prunes
¼ each sunflower seeds, oats, flax seed, pumpkin seeds
Almond Butter Cacao Chip
1 cup raw almonds
1 cup dates
10 prunes
½ cup cacao nibs
Instructions:
- Mix all ingredients into a food processor and process until crumbly and the nuts are in small pieces, and the mixture begins to stick together. About 2 minutes
- Place parchment paper in a loaf pan, or square casserole dish
- Carefully place the fruit and nut mix onto the parchment paper and either use a glass, your hands, or the extra parts of the parchment paper to firmly press down into the pan.
- Place in the fridge for 30 minutes to firm up
- Remove from pan and cut into desired bars
- Wrap in plastic wrap and store in the freezer. (no need to thaw before eating, they are not too hard to eat when taken directly from the freezer)
