Pancakes are my daughters favourite breakfast, but I usually make them only on weekends when I have time for them and we’re not scrambling to get the kids out the door to the bus of drop off at daycare.
This recipe tho, could be quick enough to make on a week day, as it doesn’t take nearly as long as my super seed pancakes to make.
But then again, they are two very different pancakes, and these ones are made especially for the busy new mom who’s looking to increase her milk supply, or keep steady the supply she’s already got.
The oats in this recipe is the star galactagogue, aka milk producing ingredient. And because you’re a busy mama with little time for dishes or anything other than changing diapers, nursing, pumping, burping and trying to get sleep yourself, this is the perfect one blender recipe that you blend up in 30 seconds, rinse it out and get on with your day.
These pancakes are sweetened with just a banana for a low sugar breakfast and will make about 8 small pancakes. I never include sugar in my pancakes cause the toppings are where it’s at with pancakes, in my humble opinion. If you must know, whipped coconut cream and berries are my go-to toppings!
Here’s how to make them
Ingredients:
- 1 banana
- 2/3 cup old fashioned oats ground into flour
- 2 eggs
- 2 tbsp ground up flax mixed with 2 tbsp water
- 1 tsp vanilla
- 1 tsp cinnamon (or more if you 💚cinnamon)
- 1/2 tsp baking powder
Instructions:
- start by mixing the flax meal and water together and let sit and gel up a little
- throw everything else in the blender and then add the flax meal at the very last
- blend until smooth (about 30 seconds)
- scoop batter using a 1/4 cup measuring cup and cook on a hot griddle or pan
- serve with yummy toppings like hemp hearts, chopped up berries, or whipped coconut cream.
