Power Pumpkin Waffles

It’s JUST the start of November and already everyone’s talking about Christmas.

The shopping mall is putting up their Christmas tree, and so is the downtown square. I only know this cause I’ve been hearing it on the radio.

Am I the only one who thinks it’s too early for the Christmas decorations?

Even my hubby said we should put our trees up soon.

Nope, I’ll wait till about Nov 25th and put them up.

So you won’t be seeing any Christmas recipes from me anytime soon!

Not that I don’t love Christmas.

I do.

It’s just that it’s still autumn, and I don’t really like snow. OK?!!

 

Anyways, Christmas aside I’m sharing my pumpkin waffle recipe.

Pumpkin is usually synonymous with fall, and pumpkin spice lattes and all that, but these waffles can be eaten all year long because you can’t even taste the pumpkin. So they are totally customizable according to what your hungry family feels like topping them with.

And if you feel like adding some pumpkin spice for autumn or for Christmas feel free to add that in!

These waffles are so healthy because they’re made with:

  • homemade hemp milk which packs a protein punch
  • pumpkin puree which adds fibre and antioxidants to help stop free radicals from damaging your cells.
  • whole grains and no sugar

Powerful Pumpkin Waffles

Powerful Pumpkin Waffles

Ingredients

    For the Waffles
  • 1 ¼ cup spelt flour
  • 1 cup quinoa flour
  • 4 tsp baking powder
  • ¼ tsp Himalayan salt
  • 2 tsp ground cinnamon
  • 2/3 cup pumpkin puree (not pumpkin pie filling)
  • 3 eggs beaten
  • ¼ cup melted coconut oil
  • 1 ¼ cup hemp milk*
  • 1 cup water
  • 1 tsp vanilla extract
  • For the Hemp Milk
  • 1 1/2 cup water
  • 1/4 cup hemp seeds
  • a few dates (optional)

Instructions

    To make hemp milk:
  1. Blend water and hemp seeds until smooth
  2. You can choose to add a date or two to sweeten it up, but I don't find that necessary if you'll be pouring maple syrup all over your waffles anyways!
  3. With the leftover hemp milk you can choose to save it, or add it into your waffle mix in replacement of some of the water.
  4. For the Waffle Batter
  5. Add all the dry ingredients in a large bowl and mix
  6. All all the wet ingredients in a medium bowl and mix
  7. Then mix the wet ingredients into the dry and mix until combined.
  8. Pour into hot waffle iron, and enjoy!
