I love this breakfast, and it’s probably my favorite morning meal. It’s perfect and quick if you have cooked quinoa leftover in your fridge, and you can make this breakfast bowl with 100% quinoa instead of the 50/50 quinoa/oats as done below.
Makes 2-4 servings
Ingredients:
½ cup quinoa (rinsed well)
½ cup steel cut oats
1 ½ cup water
Cinnamon
Fresh Berries
Place quinoa, oats and water in a pot, cover and heat over high heat until boiling. Then turn down to simmer for 20-25 minutes. (the shorter amount of time you simmer the more sticky it will be)
Once the quinoa and oats are finished cooking, portion out your breakfast and mix with 1TBSP pure Canadian maple syrup, and a few dashes of cinnamon to your liking. I like lots of Cinnamon! Then top with any of my favorite topping from below.
Toppings:
Raisins
Goji berries
Toasted coconut flakes
Sliced almonds
Chia seeds
Hemp hearts
This breakfast is so versatile because you can add in any of your favorite in-season fruits and seeds and nuts you have on hand in your pantry.
Enjoy!
