This is our favorite string bean dish… well I guess cause it’s the only way I ever prepare them!! I guess that means I should get creative and get experimenting!!
I always remember the first time I made this as a vegetable side for my husband’s family when we were first engaged. His younger sister, who wasn’t all that young at the time – 20 years old commented “yum, I really like this – what do you call the green stuff?” Ummm you mean the string beans???? She didn’t know what string beans were!! I couldn’t believe it!!! This was the beginning of my introduction of bringing more vegetables to the mouths of the family I married into!!
Serves: 4 side servings
Ingredients:
- 1 bunch green or yellow string beans trimmed (approx 4-6 cups)
- 1 package 8 ounces whole mushrooms quartered
- 2 tbsp olive oil
- 3 large cloves garlic pressed
Method:
1. Steam beans until tender crisp and dunk into bath of icy water (this stops the cooking process and retains their vibrant colour)
2. Meanwhile sauté mushrooms and garlic until the mushrooms are soft and cooked through
3. Add beans to the pan and sautée just enough to coat beans with garlic and warm them up a bit
